Rudy's Sissy Sauce - Flavors of Texas





Ingredients:

8 oz. tomato sauce
1 cup ketchup
... 1/2 cup dark brown sugar
2 1/2 tbs white vinegar
2 tbs worcestershire sauce
1/4 cup fresh lemon juice
1 tsp garlic powder
1 tsp black ground pepper
1/4 tsp cumin
1/8 tsp cayenne pepper

Directions:

Mix all ingredients and bring to a low simmer for a few minutes. Cool and serve.

Rudy's BBQ Sauce - Flavors of Texas



Ingredients:

1 pound butter
1 pound onions, finely chopped
5 lemons, cut into 8 wedges, lengthwise
1/3 gallon Worcestershire sauce
3 ounces red wine vinegar
3 ounces granulated garlic
1 to 2 pounds brown sugar, to taste
1 gallon ketchup
12 ounces tomato juice
8 ounces tomato vegetable juice
Tomato puree, as needed for thickness
Salt and freshly ground black pepper, to taste

Directions:

In a large sauce pot, melt the butter. Add the onions, lemons, Worcestershire sauce, red wine vinegar, and granulated garlic, cook until the onions are soft. Then add the brown sugar, ketchup, tomato juice, tomato vegetable juice, and tomato puree. Taste and adjust the seasonings. Strain the sauce after it is cooked. Store in jars with tight fitting lids in the refrigerator.

Rudy's BBQ Rub - Flavors of Texas



Ingredients:

1 pound salt
4 ounces chili powder 
3 ounces black pepper, coarsely ground
3 ounces black pepper, finely ground
2 ounces hot paprika
2 ounces garlic powder

Directions:

Mix all ingredients together and place in an airtight container. Rub on beef, pork, chicken, lamb (anything) generously and marinate 1 to 5 days, refrigerated, before cooking.
